New Restaurants in Doylestown, PA: A Fall 2026 Dining Guide

October 22, 2026

Brown paper still covers the big front windows at 50 N. Main St. The Bucks County Herald reported "a fair amount of speculation" about what's happening inside the old Waters Edge Winery & Bistro. Out on Route 611, steel frames for three new buildings stand where the Regal Cinema used to be.

Those two sites explain this season's changes. Downtown, the new places are local owners moving into familiar addresses: the Hattery space, the old Lil' Doms storefront, the top floor of Main Street Marketplace. Two of the new bars stock their lists with drinks made in Pennsylvania. The national names everyone has been asking about are going up on Route 611, and they're on a much longer clock.

Familiar addresses, new owners

Most of what opened downtown since June went into a space with a history. Here's what changed, and where.

The Hattery space now has a still

The Doylestown Inn spent about two years turning the old Hattery at 18 W. State St. into The Still on State. Central Bucks Now describes it as an Irish pub with its own small distillery on site, called The Tilted Brim. General manager Billy Gilbo has run the Doylestown Inn for seven years and worked as a chef for 26 years before that. He told the Bucks County Herald he wanted "a fun, welcoming destination" for locals and visitors.

The menu is pub food done with care: fish and chips, smoked wings with a choice of sauces, a rotating barbecue special, cheese curds, baked brie and the bar's own eggrolls. The cocktails use Pennsylvania spirits. The Still opens at 3 p.m. Wednesday through Sunday and stays open until 11 p.m. on Fridays and Saturdays. It's closed Mondays and Tuesdays.

Up on the roof at 22 S. Main

The same focus on Pennsylvania drinks continues a block away, three floors up. The Roof on Main opened June 19 on top of Main Street Marketplace. Patch reported it as the borough's first rooftop bar. Owner Will Wister told the Bucks County Herald that the liquor license covers only Pennsylvania-made drinks. The space holds about 200 people, seats about half of them, and doesn't take reservations.

The view is the reason to go up. Wister told Patch that the roof sits at one of the highest points in town and faces south, so on the clearest days you can see the Philadelphia skyline and the Roxborough towers. The bar doesn't serve food and you can't bring your own. You can order from Villa Capri or The Side Bar, and they'll bring it up to your seat.

The Main Street Sport & Social site lists the roof as open daily, weather permitting. Posted hours start at 3 p.m. Monday through Thursday, and the bar opens earlier on weekends. The site hasn't announced a winter schedule. As November gets colder, check before you climb the stairs.

A new pizzeria at a familiar South Main storefront

Grande Pizza & Catering, at 276 S. Main St., is the quietest of the new arrivals. It opened in August, a few days after Lil' Doms Pizzeria closed at the same address, and held its grand opening on Monday, Oct. 5, with half off all food. The Doylestown-Buckingham Record noted that Grande kept the old phone number, 215-345-8500. If that number is saved in your phone under the old name, it still reaches pizza on South Main.

A weekday cafe out on Swamp Road

Wheat & Vine opened a second cafe in August. This one is inside the Cross Keys Office Building at 4259 W. Swamp Road. The mailing address says Doylestown, but the building is in Buckingham Township. It opened Wednesday, Aug. 12, at 8 a.m.

The cafe brews Rival Bros. coffee and serves espresso drinks, seasonal lattes, breakfast, sandwiches, salads, baked goods and grab-and-go items. The opening announcement listed Saturday morning hours. The cafe's current page shows weekdays only, 8 a.m. to 2 p.m., and it's closed on weekends.

Planning around the hours

These places keep very different schedules, so the day of the week decides your options.

  • Monday or Tuesday: Wheat & Vine at Cross Keys for coffee before 2 p.m. The Roof on Main from 3 p.m. if the weather holds. The Still on State is closed.
  • Wednesday or Thursday: All three are open, starting with coffee at Cross Keys and ending with The Still and The Roof from 3 p.m.
  • Friday or Saturday: The Still runs until 11 p.m. The Roof opens earlier in the day. Wheat & Vine at Cross Keys is closed.
  • Sunday: The Still from 3 p.m. to 10 p.m., and The Roof on its weekend schedule.

Still behind the paper at 50 N. Main

Tusk is the one downtown opening that hasn't happened yet. Joy and Michael Grafenstine, who also own Roberts Block in Glenside and Bonnet Lane Family Restaurant in Abington, had hoped to open this summer. Joy Grafenstine told the Bucks County Herald that the renovation is taking longer than expected, and the couple is aiming for a late-October launch. "This is not your 'next door' bar scene," she said.

Tusk will be a two-level restaurant the owners call a modern steakhouse. The downstairs dining room seats 30, the street-level room seats about 35, and the bar holds 20 to 25 more. It has a full liquor license, so unlike The Roof on Main, it isn't limited to Pennsylvania-made drinks. WhatNow Philadelphia described the menu plans: seasonal ingredients, comfort food with a twist, vegetarian and gluten-free dishes, martinis and small-batch bourbon. Tusk's website still says it is "preparing to open," with no date posted. Check there or watch the windows before you plan a dinner.

Steel on Route 611, and a 2027 timeline

The national brands are coming to the north end of Barn Plaza, where the Regal Cinema was torn down over last holiday season and into early 2026. Doylestown Township supervisors approved the plans in August 2025. Patch reports that the frames of three buildings with 43,000 square feet of retail and restaurant space are now going up next to Whole Foods and Kohl's. Here's the announced tenant list:

  1. Pottery Barn, 13,000 square feet
  2. Burton's Grill & Bar, 6,000 square feet, with 140 seats inside, a 32-seat bar and a 75-seat patio. It will be the chain's first Bucks County location.
  3. Williams-Sonoma, 6,000 square feet
  4. Sephora, 5,000 square feet
  5. Shake Shack, 3,000 square feet
  6. Naya, a Middle Eastern fast-casual spot and the brand's third in Pennsylvania
  7. Starbucks, 2,000 square feet
  8. Just Salad, 2,000 square feet
  9. LaserAway, 1,840 square feet

Brixmor owns the center at 1745 South Easton Road. Its July 2026 investor filing says the Starbucks will have a drive-thru. The same filing estimates the redevelopment will reach stabilization, Brixmor's term for a leasing and occupancy milestone, around June 2027. That's a company projection for the whole project, it isn't an opening date for any single store, and Brixmor says its estimates can change. No tenant has announced an opening date. Until one does, a Shake Shack burger or a Starbucks drive-thru on 611 is something to watch for, not something on the schedule.

So for this fall and winter, what's new to eat and drink in Doylestown is mostly downtown: the pub on State Street, the rooftop on South Main, the pizzeria in the old Lil' Doms space, and, once the paper comes down, the steakhouse at 50 N. Main.
